Palada Payasam

📝 Ingredients:

  • 1 cup rice ada (rice flakes or rice pasta pieces)
  • 1 litre full cream milk
  • 1 cup sugar (adjust to taste)
  • ½ cup thick coconut milk (optional, for richness)
  • 4–5 cardamom pods, powdered
  • Ghee – 1–2 tbsp
  • Cashew nuts – 10–12
  • Raisins – 10–12

👩‍🍳 Method:

1. Prepare the Ada

  1. If using store-bought rice ada, soak it in water for 30 minutes.
  2. Drain and keep aside.

2. Cook the Payasam Base

  1. In a heavy-bottomed pan, boil the milk on low-medium flame.
  2. Add soaked ada slowly while stirring continuously to prevent lumps.
  3. Cook on low flame for about 15–20 minutes until ada is soft and the milk thickens.

3. Add Sweetness

  1. Add sugar and stir until dissolved completely.
  2. Add cardamom powder for flavor.

4. Add Coconut Milk (Optional)

  1. Add thick coconut milk for extra richness.
  2. Stir gently and cook for another 2–3 minutes.

5. Fry Nuts

  1. In a small pan, heat ghee.
  2. Fry cashew nuts and raisins until golden brown.
  3. Add them to the payasam.

6. Serve

  • Serve hot or chilled, according to preference.
  • Garnish with fried cashews and a pinch of cardamom powder.
