Palada Payasam
📝 Ingredients:
- 1 cup rice ada (rice flakes or rice pasta pieces)
- 1 litre full cream milk
- 1 cup sugar (adjust to taste)
- ½ cup thick coconut milk (optional, for richness)
- 4–5 cardamom pods, powdered
- Ghee – 1–2 tbsp
- Cashew nuts – 10–12
- Raisins – 10–12
👩🍳 Method:
1. Prepare the Ada
- If using store-bought rice ada, soak it in water for 30 minutes.
- Drain and keep aside.
2. Cook the Payasam Base
- In a heavy-bottomed pan, boil the milk on low-medium flame.
- Add soaked ada slowly while stirring continuously to prevent lumps.
- Cook on low flame for about 15–20 minutes until ada is soft and the milk thickens.
3. Add Sweetness
- Add sugar and stir until dissolved completely.
- Add cardamom powder for flavor.
4. Add Coconut Milk (Optional)
- Add thick coconut milk for extra richness.
- Stir gently and cook for another 2–3 minutes.
5. Fry Nuts
- In a small pan, heat ghee.
- Fry cashew nuts and raisins until golden brown.
- Add them to the payasam.
6. Serve
- Serve hot or chilled, according to preference.
- Garnish with fried cashews and a pinch of cardamom powder.
