Besan Ladoo
📝 Ingredients:
- 2 cups besan (gram flour)
- 1 cup powdered sugar (or as per taste)
- ½ cup ghee (clarified butter)
- 2–3 tbsp chopped dry fruits (cashews, almonds, pistachios)
- ½ tsp cardamom powder (elaichi)
- Saffron strands (optional, for flavor & color)
👩🍳 Method:
1. Roast the Besan
- Heat a heavy-bottom pan/kadhai.
- Add ghee and let it melt.
- Add besan and roast on low flame, stirring continuously.
- Roast until it turns golden brown and releases a nutty aroma (about 15–20 minutes).
- ⚠️ Do not roast on high flame, otherwise besan will burn.
2. Add Flavor & Nuts
- Add cardamom powder and mix well.
- You can also add saffron strands and chopped dry fruits at this stage.
3. Mix Sugar
- Switch off the flame and let the mixture cool slightly (lukewarm, not hot).
- Add powdered sugar and mix well until combined.
4. Shape the Ladoo
- Grease your hands with little ghee.
- Take small portions of the mixture and roll into round balls (ladoo shape).
- Decorate with a dry fruit piece on top (optional).
5. Serve & Store
- Let them cool completely.
- Store in an airtight container – stays fresh for 2–3 weeks.
🌟 Tips:
- If mixture is too dry → add a little warm ghee.
- If mixture is too soft → keep aside for 5 minutes, it will firm up.
- Always roast besan slowly for perfect taste.
